Shrimp Scampi on Pasta
Tonight, I had to make dinner on a very tight schedule. At the same time, I was craving Scampi! So, I chanced upon this recipe that takes 25 minutes to prepare and wine that I didn't have at home. I tweaked it a little so that it only took me almost half the time to make it, while boiling the pasta al dente. It turned out a bit stronger and a bit spicy, but it worked. Serves 3 people.
Ingredients
400g Peeled Shrimps
1/2 tsp Kosher Salt
1/2 tsp Baking Soda
3 tbsp. Olive Oil
2 tsp Garlic Powder
1 tsp Chili / Pepper Flakes
1 tbsp White Vinegar
50g Butter
1/2 tsp lemon juice
1 tsp Parsley
1 tsp Tarragaon (Dragon in Swedish)
1 tsp Chives (Gräslök in Swedish)

1/2 tsp Baking Soda

2 tsp Garlic Powder
1 tsp Chili / Pepper Flakes
1 tbsp White Vinegar
50g Butter
1/2 tsp lemon juice
1 tsp Parsley
1 tsp Tarragaon (Dragon in Swedish)
1 tsp Chives (Gräslök in Swedish)
Directions
- In a huge pan, mix the shrimp, kosher salt, and baking soda. Leave for about 10 minutes.
- Add 2 tablespoons olive oil and heat in high temperature. Keep stirring until half-cooked. Do this for about 3 minutes.
- Add the last tablespoon with garlic and red pepper flakes. Keep stirring until it turns a bit golden.
- Add the white vinegar and bring to a boil. Don't forget to keep stirring.
- When it starts to dry, add the butter, parsley, chives, and lemon juice.
- Serve with pasta and season with Kosher salt and chives.
