Baked Fish with Olive Oil and Spices
Busy day? Probably doing three things at the same time. This recipe is perfect for someone who has to sit all day at home doing computer work, and stretching as the only source of exercise!
Ingredients
Olive Oil (The one displayed is from Coop Ekologi - Italiensk)
Basil
Koriander
Mint
Fish Fillets
Directions
- Pour a bit of olive oil on the pan before placing the fish. It would be better if the fish were thawed, not cooked directly from the freezer.
- Pour some more olive oil and brush the entire surface of the fish before sprinkling in basil, coriander, and mint. Make sure that the fish are almost equal in thickness, meaning the edges should be pushed or tucked in so that they do not burn first while cooking.
- Basil is great for frying, especially with olive oil. This is just the edge the fish needs when it starts heating up in the oven.
- Coriander is used and sprinkled with vegetables but adding this a bit later (after being cooked in the oven) does the trick.
- Mint is mostly used with red meat and lamb, but experimenting on adding it with white meat with olive oil and basil makes the taste just a bit different.
- Put the fish in the oven that has been preheated for 200°C for 20 minutes. Lately, our oven has been acting up so if you have the same issue, just take a look at it from time to time and take it out of the oven until it starts to be a bit flaky, but not too flaky. Availability of Ingredients
- There are a lot of spices found in different countries like Knorr, Santa Maria, and other grocery-produced brands like ICA, Willy's, and Coop in Sweden. In the Philippines, it is pretty much McCormick monopolizing the grocery racks in Rustan's, SM, Liana's, or any other leading grocery stores. Any brand would do for the use of this recipe. The important thing is you use the correct spices.
- Any kind of fish fillet would do. Milkfish and Tilapia does not fall into the category. I think most Filipinos, by heart, know the best recipes for those :)
