Sundried Pork Stew


Seeing that there has not been any entry here about pork, I decided to make dinner tonight with one of the easiest ways to prepare it despite time constraints.

 



Ingredients

Pork, 500 grams
Black Pepper, 1tbsp
Sundried Tomatoes, 6-8 whole pieces
Basil, 1tbsp
Apple Cider Vinegar, 100 ml




Directions
  1. Fill the casserole with water, add black pepper.
  2. Boil pork for about 30-40 minutes on a gas stove in medium to high fire with cover. Cook longer, if preferred. Boiling it more makes the meat really tender and the fat comes off easily when sliced.
  3. Before the water entirely evaporates, add the sundried tomatoes and basil leaves. Add vinegar.
  4. Cover the casserole.
  5. Let it boil / fry for 15-20 minutes more in low to medium fire. Feel free to stir occasionally.




Served with rice or couscous, vegetables, and more tomatoes if you want.



Availability of Ingredients
  • There are many kinds of vinegar. Using apple cider vinegar just gives off a stronger taste and smell but if you decide to use other kinds, that would be fine too.
  • Basil can be bought off any rack from any of the leading supermarkets anywhere. In Philippines, McCormick mostly has the spices, and it can be bought in SM, Rustan's, or Liana's, S&R, Shopwise, and the like. In Sweden, it's ICA, Willy's, Hemköp, or Coop.
  • Sundried tomatoes can be bought in bottles, both in the Philippines and Sweden. Although, sometimes, it is better to make your own. Check out this link on how to make your homemade sun-dried tomatoes.
